Hydroxylates preferentially prolines in second positions in the -Pro-Pro-Gly-triplets. Hydroxyprolines are important constituent of many plant cell wall glycoproteins such as extensins, hydroxyproline-rich glycoproteins, lectins and arabinogalactan proteins. Can hydroxylate collagen-like peptides and hypoxia-inducible transcription factor peptides.
